The Weekend Five: Making Stuffed Peppers

I've been making a major effort to cook more often. This week I made a delicious concoction: peppers stuffed with rice and ground turkey. So yummy. I found the recipe here. They were super easy to make, reheated nicely, and disappeared quickly!
I have some ideas for future variations -- maybe using mushrooms instead of meat to stuff them? I was also thinking of doing stuffed tomatoes or zucchini as I'm not the hugest fan of cooked peppers, though these were quite tasty. I plan to experiment!
